Wino Wednesday: Breakfast On The GO!
On work days I have to leave the house by 7am. I am the QUEEN of alarms. I have 1 that starts the “waking up” process. . . And several more that equate to if you don’t get up now you wont be able to do… xyz.
Did I say I was a morning person? Because while I used to be… I’m definitely NOT these days. SO I have like 5 alarms. The first starts the slow waking up process. The next few vary between time to doddle and get your arse in gear! Then I have ones that remind me if I’m not already in the shower, cooking breakfast, or walking out the door I need to be.
I’m not the girl you will see getting up early to get a work out in. I WISH I could be that girl. . . But alas, I’m just me.
One thing I have had to adjust my routine for is making breakfast. Partially because I cannot eat out (pretty much at all with my allergies) but aI also can’t afford to spend money on foods that make me sick. SO back when I was trying this “eat 6 times a day” meal plan I made breakfast a priority. Some days it was meal prepping to microwave food. But I’ve found that meal prep the lunches +/- dinners was easier for me. And quick frying some eggs, slapping them on some toast worked. I’ve since had to give up my gluten free toast… temporarily while I’m working on my weightloss plan.
Here’s what works for me and my busy mornings:
- Coconut Oil melted in a frying pan
- Frozen spinach sautéed
- 2-3 scrambled eggs
- Almond/Coconut Milk
- Tbsp Flaxseed meal
- Salt & Pepper to taste
- Glass Tupperware container
- Fork & Napkin
I come down the stairs after showering and getting dressed. Feed the dog (Love you Hazel Nut!) and start the coconut oil in the pan. Put in broken up pieces of my frozen spinach. By now Hazel Nut has usually finished her breakfast and is ready to be let out. . . Next up comes my eggs. I usually have enough time to crack those suckers, add my almond milk and mix them into the sautéing spinach. I sprinkle flaxseed (something I started adding when I need more fiber to my diet, LOVE IT), add salt and pepper.
I’m able to scramble my eggs while I pack my lunch. I have a lunch bag that has a side loader for my lunch and carries my hot breakfast in the top pouch. It’s worked out great for me so far. Some days I am a bit slower in the process, but most days I can get my breakfast made, lunch packed, and Hazel Nut taken care of in 15-20 minutes.
This coming week I’m bringing back an extra step. To help me reach my goals, health and fitness, I picked up a new TEAMI tea shipment. I’m hoping to work in my tea to my routine… without having to get up any earlier. 😆
