Hold the Wine… Show me the SUGAR!

Today was… well a day. I decided that while I wasn’t going to work on cooking a meal… I was going to break out my mixer and whip up a batch of cookies. I – like many people – EAT my feelings. Regardless if those feelings are happy, sad, joyful, anger, or frustration. I use food to shame my body, or to celebrate it. Sometimes… I just don’t enjoy the work it requires… Like clean up. Nope. I don’t like doing that. LOL But sometimes LIFE just creates the best environment for warm chocolate chip cookies.

*Please remember I’m gluten…dairy… soy….. and nut free(ish)

I initially started out with a particular type of cookie recipe… however I should have looked at alllll of the ingredients. This particular recipe was NOT dairy free so I modified and well…. I just really did my own thing entirely.

Ya know the whole directions part of the recipes for ANY food item that gives you “First do this.. then do that..” well I just dumped ALL of the ingredients into the bowl and whisked away…. and for far to long.

I’m a bit rusty, but even I knew I was going to make these cookies flat. Just wow.. They’re REALLY FLAT.

I mean… Do you SEE THOSE. 😂

But looks aside they still taste great. I left some of the batter to sit overnight in the fridge. Here’s hopefully “resting” the batter improves the quality of the dough. Without affecting the taste.
