Gluten Free Dairy Free Lasagna

When you are “everything free” as some call me… certain foods that were once staples in your life growing up are…. well off limits.

I’m here to tell you that you CAN take back foods you used to love! This week we’ll start with GF/DF Lasagna!

What you’ll need:

1lb Ground turkey (or meat of your choice)

2 jars of pasta sauce (I chose tomato basil Prego)

3 Cloves of garlic

1 box Gluten Free Lasagna noodles

15 slices of Dairy Free Mozzarella cheese

*Optional add spinach!

Where to begin:

Grocery store. While you may have all of these ingredients at your house already… I didn’t. But I came across my inspiration strolling the isles at the local Big Y.

I had the ground turkey meat, and the garlic… but I didn’t have the other items. I wasn’t exactly sure how this dinner was going to work out.. but I was looking forward to trying it out.

Initially I wanted to add in spinach. But unfortunately I forgot to add it to the pan before I was done putting it together. Whoops.

Filling in the makin:

First brown the meat. I always like to add the sauce in before the meat is 100% cooked. I added the first jar of Prego in with the meat.

Next I added fresh garlic. I minced 3 cloves and added them to the meat sauce. Some recipes will also recommend adding fresh basil. I didn’t, but it was already a part of my sauce of choice.

I particularly like this version of Prego sauces. I also buy a fair amount of the Barilla gluten free pasta noodles. Usually it’s to keep on hand for #fatkidprobs meals but it’s also easy meals to make. In tonight’s meal of choice it was just a craving.

Putting it all together:

I started off with spraying Olive Oil in the pan I selected. Then poured a small portion of the jar to lightly layer the bottom with sauce. I started layering the noodles first… then added the meat sauce. Next I layered mozzarella slices… again dairy free (and gluten free). From there I continued the layers until all of the ingredients were placed in the pan.

Bake & Chill:

Bake the lasagna in the oven at a temperature of 425*

Preheat the oven while you’re creating your masterpiece…

Cover for the first 40 minutes with foil. Next remove the foil for 10-20 minutes. Let the lasagna rest for a few minutes. Then enjoy!
